Often considered one of our most precious culinary treasures, cherries were introduced to western Europe by the Romans.  They grow well in temperate environments where cold winters induce dormancy and warm springs promote ripening.

The cherry is a close relative to the plum, as well as the peach and apricot.  Two generally important groups of cherries can be distinguished:  Prunus avium -- the sweet cherries, and Prunus cerasus -- the sour cherries.  Both are represented well in our Organic Sweet & Sour Cherry confiture.

Even though the western United States is best known for its sweet cherries and the east for its sour cherries, Colorado has proven to be an excellent environment for the Montmorency cherry -- an older French variety considered to be the finest sour cherry available.  It is this Colorado cherry that has been the basis for the rave reviews that our cherry confitures have received. 

Maraschino cherries are not a variety of cherry. They are light-flavored cherrries that are
bleached, dyed, sugared, flavored with almond, and preserved.
